Hello! Today we are gonna make Veg curry Chop ginger (one slice) and garlic (4 cloves) finely Chop 4 green chillies finely Chop one tomato and one large onion finely Cut required veggies as shown in the video Here I have chosen potato, carrot and beans You can also add your desired veggies like green peas, cauliflower Coriander leaves chopped finely for garnishing Place kadai (pan) over the stove. It would be better if the kadai (pan) is deep. Pour 2 tablespoon oil. Here I am using groundnut oil. You can use any oil of your choice once oil is hot, add some cumin (jeera) Do not let it burn Next, add the chopped ginger and garlic Make sure the ginger and garlic do not change into brown colour Coz it may change the flavour of the curry Add in chopped green chillies Next, add the chopped onion Stir well When the onion turns in golden colour, add the chopped veggies Let the veggies fry as well. This will enhance the taste. So now I have added them Stir well. Close the pan and let it cook for 5 min. Stir once in between After that add chopped tomato I have used one onion and tomato here. If you need gravy, please add more onion and tomato Mix the tomato and close the pan for 5 minutes until the tomato blends. Now everything is blended well. Add in a pinch of turmeric powder Stir well and add chilli powder (1 tablespoon) Add coriander powder (1 tablespoon) Garam masala and pepper powder if required Add salt as required Stir well. You can add some water if the curry burns. Close the pan and let it cook for 10 minutes Stir now and then I am adding some water to avoid curry getting stick on the pan. I will leave the curry to cook until the water evaporates as I want it in dry consistency After switching off the stove, garnish it with chopped coriander leaves and mix it well The curry is now ready to be served Please try and let me know comments This side dish goes well with chappati (Indian bread) Thank you for watching bye!
