Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make veg noodles today. When we have street side Chinese It contains Ajinomoto which gives flavor to those noodles. We don’t use it in homemade recipe. So we don’t get that flavor. Ajinomoto is not good for health. To use or not is everyone’s choice.

You can use if you want to. What can be an option for it? If we want close taste & flavor. Then we can make smokey noodles. So this is special recipe. We can call it smokey veg noodles. It tasts nice. You don’t feel like any taste or flavor is missing. Heat up oil in a pan. Add finely chopped garlic & finely chopped ginger. Fry it for just about 30-40 seconds. After about 30 seconds add sliced onion & fry it for just about a minute. Not longer. When onion is fried a little add carrot & capsicum. Fry for just about 2 minutes. Not more. Veggies are almost fried. I have fried for just a minute. Let’s keep this pan aside. Boil water in a pan. Add 1 tbsp salt & noodles. You can use any noodles that you get in the market. Follow the packet instructions. I will boil for just 2 minutes & then will drain water from it. Separate noodles while those are boiling. Don’t wait for 2 minutes for them to separate. When these become a little soft after dropping in water, separate them like so. So that noodles don’t get overcooked. Don’t puff up. Noodles are nice & not fluffy. But these are cooked perfectly & are separated. Drain all the water from it. No need to rub oil. Just drain water. We will be using it quickly. This is advantage of making recipe at home. You can add veggies as much as you want. Fry everrything for just a minute. You can do this process parallely. I have juts 1 burner. So I removed veggies in between & boiled noodles just for you to show. But you can fry veggies on one burner Boil noodles on other. Fried for just a minute. I never add sauce in veggies. Add noodles & them sauce on it. The reason is if we add sauce in veggies now then sauce gives its color to veggies & noodles don’t get that required color. Also color of veggies change. To avoid that add noodles first. Then add black pepper powder, soya sauce, tomato sauce, Add chili sauce. Chili sauce is homemade. Already posted the recipe. The sauces those we used like soya sauce, tomato sauce Already have salt in them. Also we added salt while boiling noodles. So I don’t add additional salt now. Fry everything quickly. Mix it. Awesome! Noodles haven’t puffed up, not fluffy. These are nice & thin. At the same time these are not dry. You feel like chocked up if noodles are dry. These are perfectly juicy. Nice color! What is missing now? Smokey flavor. Move noodles aside. Place a katori there. I have heated up coal on gas & put it in that katori. Add oil on it. Nice!! Cover with lid Give it smokle nicely for about 2 minutes. I have smoked for just 2 minutes. Smokey noodles are all ready. Fantastic!! Smoke gives nice flavor. Do try it. My mouth is watering.
